What a week! Nearly a year ago, I left my tech job to go all in on this cooking business, and what a journey it’s been. Countless recipes tested, plenty of lessons learned, and, of course, a plethora of cheese tax paid 🐕. It’s easy to get caught up in the day to day so I’m trying to take more time to celebrate the milestones. And this week, we hit 300K 🎉 on instagram, so let’s celebrate together!

greekish pita nachos

How did this recipe come to be? It started with a serious craving for a roasted red pepper sauce. At first, I leaned toward a simple sheet pan situation—roasted veggies, meat, the works. But then I came across this video from @sundaykitchenau talking about fatteh, a dish that starts with perfectly crisp-yet-soggy (in the best way) pita chips, and I was instantly hooked.

I’ve always had a thing for textures like this—the way a crouton softens just enough in Caesar dressing or how a stale Cheezie somehow tastes better than a fresh one (don’t ask me why, it just does). So, I had to make it happen. After some experimenting, I landed on a version that brings in elements of fatteh, viral Greek nachos, and, naturally, a little extra flair.

And here we are.

Funny enough, I didn’t realize just how fast this comes together until I was filming—this is truly a 30-minute meal, even if chopping isn’t your strong suit. And you know I’ve got a few time-saving tricks to make it even faster (sharing those below!).
