Would this be even better with bacon or avocado - you betcha, but frankly I didn’t have the energy to cook bacon, and my avocado wasn’t ripe enough.
Is drinking the pickle juice + cheese tax part of the recipe? Duh.


now let’s make a sandwich. ingredients must be in. this. order.
bottom slice:
toasted seedy bread
grainy dijon
smoked chicken, piled not layered (see video)
thick a** slices of old cheddar
red onions (soaked in cold water to reduce the sharpness)
Miss Vickie’s BBQ chips or any kettle cooked BBQ (as many as you can fit - do a lot)
top slice:
toasted seedy bread
smoky dill (makes enough for 2 large sandwiches + a bit more)
1/4 cup mayo
2 tbsp sour cream
2 pickles, finely diced
1/2 tbsp pickle juice
1 tbsp chives
1/2 tsp smoked paprika
1/4 tsp garlic powder
salt and pepper
romaine lettuce
