3 brown sugar sausage links
4 eggs

9 tater tots
1 tbsp kewpie mayo
1/2 tbsp sriracha
1 tbsp maple syrup
3 flour taco shells

Start your tots. Make your tots according to package instructions, get them super well done for extra crisp. (I airfry mine at 400 for 8-10 minutes).
Make your sauce. To a small bowl add 1 tbsp kewpie mayo, 1/2 tbsp sriracha and 1 tbsp maple syrup. Whisk and taste, adjust to your liking of spice vs sweet.
Prep your meat shells. Place 3 flour shells on a flat surface. Remove sausage from casing and press onto tortilla into a thin layer, squishing to the outer edges (it will be a thin layer). Set aside.
Make your eggs. Crack 4 eggs into a bowl, whisk well. Add to a nonstick frying pan over medium heat. Season with salt and pepper. Using a spatula, lightly mix every 10 seconds so the egg sets a bit before each stir and you get large chunks of scramble. Cook to your desired doneness.
Cook your shells. While your eggs are cooking, fry your taco shells. Fry on medium high, meat side down, for 30 - 60 seconds until golden and meat is cooked through. Set aside.
Assemble your tacos. Top shells with your scrambled eggs, halved tats, a drizzle of sauce, and lots of chives. Enjoy!
