Cook your chicken. Season your chicken with 1 tsp garlic powder, 1/2 tsp onion powder, 1 tsp paprika, 1/2 tsp chipotle powder, 1 tbsp brown sugar, 1 tsp salt and 1/2 tsp pepper. Mix well. Heat a pan over medium heat with 2 tbsp oil, add chicken and flip every 2 minutes until cooked through (about 10 minutes total).
Prep your shells. Finely grate your parmesan. Warm a small pan over medium heat. Place a thin layer of parmesan on your pan (slightly larger than the shell) and place tortilla on top. Cook for about 1 minute until golden brown. Flip and cook for 20 seconds, and then repeat for all shells.
Assemble. To your cheesy shells, add lettuce, caesar dressing, sliced chicken, more parmesan and fresh pepper. Serve!
