Tools required🍴
Chef’s knife
Cutting board (not my exact one but very similar)
Ingredients:
1 tbsp fresh dill
1 green onion
1 chicken breast - shredded
2 tbsp plain skyr
1 tbsp mayo
1/2 tsp dijon mustard
2 dill pickles
1 tbsp dill pickle brine
Dill pickle chips for serving
Instructions:
Make your salad
Shred your chicken, finely dice your pickles, mince your fresh dill and green onion, and place all ingredients (excluding chips) into a bowl and stir. Taste and add more of whatever you like to adjust to your taste!
Notes:
Make ahead: this is great for meal prep and you can easily double or triple the recipe and eat it all week (just keep in mind how old your cooked chicken is - cooked chicken should be eaten within 3-4 days of cooking it).
Serving: Serve with chips, lettuce cups, on a sandwich or just eat as is.
Substitutions:
Chicken: This would be great as a tuna salad or canned salmon. I haven’t tried with anything else but let me know if you do!
Dill pickles: If you hate dill pickles, sub in sweet pickles and add in a splash of white vinegar to add some tang.
Skyr: Use plain greek yogurt or just more mayo.
Mayo: Add 1/2 tbsp olive oil to give it some richness.
