Happy Saturday!!! I missed you last week! But it was my anniversary so I decided to take a bit of a break, thanks for understanding ❤️ and for sticking around. I promise not to make a habit of skipping our Saturday’s.

In fact, on that note, I’m so excited to share that I’m growing my team! Mostly to bring way more content to the Substack world. You’ve probably heard me say this before but I think if you’re here supporting, you should be getting MORE than your moneys worth. And so I’m bringing on some support to make sure that happens 🫶 Very exciting!!

But back to our anniversary.

7 years this year, and it was wonderful, and mostly revolved around food (bless Kyle - despite him not being a huge foodie he sure does plan everything around good food for me). We started with our favorite light breakfast (gotta save room for a big dinner) - Acai bowls. We had a super chill day, took Reggie on a nice long week, and then got dressed up for fancy cocktails and a beautiful dinner at one of our favorite spots - Savio Volpe. We finished the night… at the legion 😂 . Very off brand but very good vibes tbh. Kyle scouted it for the old school photo booth and ski ball, but we stayed for the vibes.

Next years anniversary will be our wedding!! Although I say wedding very loosely as we’re doing a courthouse wedding with a lowkey dinner with close family. As 2 introverts, hosting a huge party with all eyes on us is just not our jam, so we decided to save all the funds and energy and focus on an awesome honeymoon together instead.

And ohmygosh this week was so jam packed because I also had such a beautiful visit with my good friend Steph The Sommelier. If you want a good laugh, and honestly a pretty epic recipe, make sure you check out the videos here and here.

Now let’s talk food.

The last few weeks have been absolutely slammed with business stuff, which means recipe testing has been… not as front and center as I like it be. Kinda wtf. So cause of that I’ve been leaning into simpler meal… but simple never means boring. Think max flavor, minimal fuss, and a big focus on efficiency (aka: chop while something’s cooking, skip the full mise en place, keep the dishes to a minimum, etc).

So what’s a go-to for easy dinners? A stir fry. Classic. But… I kind of hate a standard stir fry. No shade, it just doesn’t do it for me. I love the ingredients individually, but something about the final dish always feels meh. So I made it my personal mission to make a stir fry I actually want to eat, and of course one you’ll probably love, even if you’re not usually a stir fry person (I hope).

This one is noodle-based (sorry rice, but noodles win). It’s packed with julienned veg that go in right at the end, so they stay bright and fresh (no soggy chunks). The sauce is super bright and punchy. It tastes just as good cold as it does hot. Oh, and it’s ONE PAN, 30 MINUTES, and VERY FEW DISHES. Wins across the board.
