If you’re in Canada, happy (belated) Canada Day! And to my American friends, I hope you’re soaking up the 4th of July long weekend with something cold in hand and tasty on the grill.
Here in Canada, we had Tuesday off and it finally felt like a real summer day. We packed in all the classics: a morning hike, a swim for Reggie, a trip to our go-to ice cream shop to sample new flavors, grilled burgers on the patio, and a new smattering of freckles as a souvenir (earned through SPF, of course).



There’s something about a summer day that makes everything taste better. It’s the season where even the simplest meals like burgers, grilled veggies, and a cold drink in a sweaty glass just hit differently. My feed is overflowing with grilling recipes right now, so I figured... what’s one more?
This week’s recipe is summery, simple, preppable, and deeply satisfying. Whether you’re hosting a backyard hang or just trying to keep dinner from heating up your kitchen. It comes together quickly, but still feels a little special.

Why I love this one:
this one is so so versatile. It’s essentially a veggie-loaded chicken salad, so you can prep a bunch of this and still have different dinners every single night this week (I share all the ways I’m using it below!)
everything cooks on the grill = minimal cleanup (bless)
it’s just as good hot, cold, or somewhere in between.
we’re in peak corn season, and it deserves its moment.
ot feels fresh and light, but still satisfying. Healthy-ish in the best way.
How I came up with this one:
It all started with an Instagram poll: corn vs. pineapple, and corn came out on top (don’t worry, pineapple fans… your moment is coming). I wanted something summery and grill-friendly that could also be prepped ahead and repurposed for easy meals.
I played around with a few sauce variations until I landed on one that balanced sweet, smoky, and tangy just right. Then I tossed in some zucchini for extra veg and because it's in season and begging to be grilled.
What I learned along the way:
The secret is in the ratio. You want just the right balance of juicy corn, tender chicken, and sauce so that it tastes bright and summery without leaning too sweet. Nail that, and you’re golden.
