January has been HECTIC for me so far, but in the best way. I’ve been super busy trying to get ahead of recipe testing as we headed to Edmonton this weekend to see my family for a belated Christmas. And lucky for us the temp is hovering just around the 0C mark. Growing up we often celebrated Christmas on different days - having a pilot dad and nurse mom leads to some funky scheduling at times. And truthfully I’m glad cause it puts less pressure on doing things on the exact right day, and now we get like 3 extra weeks of Christmas 🎉
Otherwise my life has been fairly uneventful so not much to share other than the fact that I’m cooking up a storm and so so happy about it.

A roast chicken is an ideal dinner to wow someone. I mean just look at that thing - I’d be nothing short of impressed if someone served me that. Perfect for date night or if you’re hosting guests. And let me tell you it’s actually surprisingly simple. When I did the rounds of taste tests with this, I even got some literal WOW’s 🙇♀️
I’ve also been on a real greek kick lately, so I wanted to incorporate some lemon potatoes to the mix, and these are insanely lemony thanks to my not-so-secret ingredient. I’ll be frank, these aren’t crispy taters, but they are soft and lush and will punch you in the face with flavor (respectfully).
This is the perfect size meal for Kyle and I, with a hefty serving of potaotes because we love potatoes. I wouldn’t recommend reducing the amount of potatoes as the liquid ratios/cook time will be impacted. You’ll just have to cope with insanely delicious leftover potatoes. Sorry 😉
And if you want to serve this to guests, I’d recommend loading up the tray with 1-2 more potatoes and 1/2 cup more chicken broth, and doing 2 birds on top (you should have space on one tray). See notes for additional serving options.
