1 cooked chicken breast diced

1 small wheel brie
1 cup shredded mozzarella
1/2 cup sour cream

2 large flour tortillas
1/4 cup craisins
2 tbsp pesto
1/2 tbsp honey
1/2 tsp garlic powder
1/2 tsp paprika
1/8 tsp cayenne pepper
1 tbsp olive oil
Produce
1 macintosh apple
1/2 small red onion
1/2 tbsp lime juice
Make your sauce. To a small bowl add 1/2 cup sour cream, 1/2 tbsp honey, 1/2 tbsp lime juice, 1/2 tsp garlic powder, 1/2 tsp paprika, 1/8 tsp cayenne pepper. Mix well and add salt to taste.
Prepare your 'dillas. Grate your mozzarella and slice your brie. Thinly slice your apple and onion. Rinse sliced onion under cold water.
Build your quesadillas, fold your tortilla in half first to use the line as a guide, layer onto half of the tortilla in this order: pesto, brie, craisins, apples, onions, chicken, mozzarella.
Cook your 'dillas. To a large frying pan over medium heat, warm a very thin layer of olive oil (1/2 tbsp per quesadilla). Once warm, add quesadilla. Cook until golden brown on both sides (about 2-3 minutes per side). Remove from pan and let cool for a minute before slicing into 4 pieces and serving with your sauce.
