I have been loving the viral date “snickers” bark but honestly, between squishing all the dates into one flat sheet, and having to cut it into pieces after freezing, it was just a bit too much work to keep re-making.

Until I saw someone make individual pieces of it. DUH! So much easier! You still have to squish the dates down, but you can also use the palm of your hand instead of a glass. You don’t have to slice them, so once you pop them into the freezer, they’re done. And you know exactly how much of everything you’re eating per piece. SOLD!

TOTAL TIME: 20 minutes
SERVES: 15 pieces

Chef’s knife
Cutting board
(not my exact one but very similar)
Parchment paper
Small bowl + spoon

  • 15 medjool dates

  • 1/3 cup natural peanut butter (I recommend chunky)

  • 150 g dark chocolate chips

  • 1 tbsp coconut oil

  • Flaky salt

  • 2 tbsp honey roasted peanuts (optional)

  1. Prep your dates
    Rip open each date and remove the pit. Squash down onto a parchment-lined plate. Once all your dates are flattened, quickly drop about 1 tsp peanut butter onto each date and place in freezer immediately so the peanut butter doesn’t spread. Freeze for at least 5 minutes.

  2. Melt chocolate
    If using, chop your peanuts into small pieces now. When your dates are almost ready, add chocolate to a small, microwave-safe bowl with 1 tbsp coconut oil. Heat in 30-second increments, stirring well each time, until fully melted.

  3. Assemble
    Remove dates from freezer and dollop melted chocolate on each piece. Sprinkle with salt and crushed nuts and return to freezer for at least 5 minutes. Enjoy immediately or store in freezer for up to 1 month.
