For the fries
4 russet potatoes
2 tbsp avocado oil
Salt
For the sauce
1/2 cup mayo
2 tbsp ketchup
2 tbsp sweet relish
1 tsp yellow mustard
1 tsp white sugar
1 tsp white vinegar
For the beef and onions
2 tbsp oil
1 white onion
1 lb ground beef*
1 tsp mustard
Salt + pepper
For the rest
1 head romaine lettuce
1/2 pint cherry tomatoes
100g grated cheddar cheese
Sliced pepperoncinis
*Can sub ground turkey - add 1 tsp beef bouillon concentrate at the same time as the mustard
Start you fries (can slice/soak in advance)
Peel and slice potatoes into 1 cm fry shapes. Drop into cold water and let sit for 30 minutes - up to 4 days in the fridge (changing water every 24 hours if so). Preheat oven to 400F. Drain and pat potatoes dry and toss in 2 tbsp oil and a generous pinch of salt. Place in a single layer on 2 parchment lined sheet trays leaving space between them so they don’t steam and bake for 20 minutes. Flip gently as they’ll be quite soft, then crank heat to 425, and bake for another 20-30 minutes until golden brown.Make your sauce (can prep in advance)
While your fries soak - mix your sauce. To a small bowl, add 1/2 cup mayo, 2 tbsp ketchup, 2 tbsp sweet relish, 1 tsp mustard, 1 tsp sugar and 1 tsp white vinegar. Mix well and set aside.Make your onions and beef
Warm 1 tbsp oil in a large frying pan over medium heat. Add diced white onion, cook for 5 minutes, salt, and continue to cook until caramelized, stirring every few minutes (about 10 more minutes total). Remove onions from pan, turn heat to medium high, and heat 1 tbsp oil. Add ground beef, breaking into small chunks. Season with salt and pepper, and let brown for 2-3 minutes before stirring. Continue cooking through, stirring only every few minutes to allow proper browning. If you have excess fat in the pan, dab it out with a paper towel as this will prevent browning. In the last minute, add 1 tsp mustard (and bouillon if using turkey) and mix well. Add in 1/2 of your cheese and stir in to melt.Assemble
Assemble your bowls with finely chopped lettuce, tomatoes, cheese, pepperoncini's and fries. Top with beef and onions and drizzle with sauce.

WOW! Since leaving California, I haven't had In and Out and I have been missing it so much. This recipe is SPOT ON. I almost started tearing up when I tasted it! The fry sauce, the beef - it tastes exactly the same as my favorite "animal style" burger. Thank you for sharing this recipe!
