lazy girl hot honey chicken bites

3-4 chicken breasts

1 tbsp butter

1 3/4 tsp garlic powder
1 tsp onion powder
1 1/2 tsp paprika
1/3 cup honey
3/4 cup Frank's hot sauce
Sesame seeds for garnish

Mashed sweet potato for serving
Marinate your chicken. Dice chicken into 1 inch cubes and place into bowl, season with 1 tsp garlic powder, 1/2 tsp onion powder, 1 tsp paprika, 1/2 tsp salt, 1/4 cup Frank's hot sauce and mix well. Set aside either for a few hours or at least while prep the rest of your ingredients.
Prep your sheet tray. Preheat oven to 400F. Line an XL sheet tray with parchment paper. Place washed broccolini on sheet tray and toss in a bit of oil with 1/4 tsp garlic powder, 1/4 tsp onion powder and salt. Mix well and push to one side. Add chicken to other side of pan.
Bake for 20 minutes or until chicken reads 165F. Check at the 10 minute mark - there may be some moisture on your pan, dab with a paper towel and return to oven.
Make your sauce. While your chicken and broccolini bake, make your sauce. To a small pan, add 1/2 cup Frank's hot sauce, 1/3 cup honey, 1/2 tsp garlic powder, 1/4 tsp onion powder and 1 tbsp butter. Mix well until butter is melted and sauce starts to thicken slightly. Taste and adjust if you prefer more honey or more hot sauce, remove from heat and set aside.
Plate. Serve in a large bowl over mashed sweet potatoes. Top with chicken and broccolini, and drizzle with sauce. Sprinkle with sesame seeds and enjoy.
