6 slices bacon

1/2 cup full fat sour cream

300 g frozen tater tots

Start your bacon. Place bacon in a single layer on a lined baking sheet. Place in cold oven and turn oven on to 400F. Cook for about 20 minutes until your desired doneness, flipping once. Remove bacon from baking sheet and place on wire rack or paper towel to drain before chopping into small bits.
Make your tots. While your bacon cooks, place tots on a large lined baking sheet - you want lots of space between so you may need to divide between 2 sheets. Once oven is preheated to 400F, place tots in for 10 minutes.
Remove from oven and use a flat cup to smash tots down. You want quite thin but if they are breaking apart when you smash, you're going too far.
Once all are smashed, return to oven for 10 minutes, flip, and bake another 10-15 until golden brown and crunchy. Remove from oven and sprinkle with flaky salt and pepper.
Assemble. Add tots to serving platter, top with a dollop of sour cream, bacon, and chopped chives.
*pro tip - scoop your sour cream into a ziploc bag and cut a small hole in the corner to easily pipe the sour cream on.
You can make the tots and bacon in advance, just reheat in the oven or air fryer for a few minutes prior to serving to make your life easier!Â
