3 of my favorite things, pickles, pizza and cheese! For this recipe I use store bought dough, most of the grocery stores near me have a ball of it availble in the deli section for around $3 and I simply can’t not use it at that price. A few tips for doing homemade pizza:
I loved using my Hexclad pizza steel for this (not sponsored). It’s handy because it explicitly can’t be preheated, so you assemble the pizza right on the steel, vs having to fight with getting the raw assembled pizza onto a piping hot pizza stone. While the crust wasn’t super golden it was firm and perfectly cooked. If you don’t have this steel, no sweat. Use a sheet pan the same way.
You want to get your oven as HOT as you can. Most pizza ovens are 800-900F. Obviously, your oven can’t get that but you will want to crank it as high as it can go to get the best results.
Dealing with the dough. One thing I learned the hard way years ago, the dough must be room temp or it won’t stretch properly. Let it sit out for at least 30-60 minutes before you even try stretching it. If it feels like it’s not working for you, work it a bit, let it sit then go back to it.

dill pickle pizza
TOTAL TIME: 30 minutes
SERVES: 2
Chef’s knife
Cutting board (not my exact one but very similar)
Hexclad pizza steel
Cheese grater
Pastry brush
Pizza cutter
For the dill ranch
1/2 cup sour cream
2 tbsp mayo
1 tbsp pickle juice
2 tbsp chives
1/4 cup chopped fresh dill
1/2 tsp garlic powder
1/4 tsp onion powder
salt and pepper
For the pizza
1 pizza dough**
1 1/2 cup grated mozzarella
1/2 cup grated gouda
2 dill pickles
1 tbsp olive oil
Fresh dill
Spicy dill chips
Prep your dough. Preheat oven to 500F. Bring dough to room temperature and press out into the shape of your pan, sprinkling a bit of flour on it to prevent sticking. Get it as thin as you can, as it does puff up when it cooks. Set aside.
Make your dill ranch. To a small bowl, add 1/2 cup sour cream, 2 tbsp mayo, 1 tbsp pickle juice, 2 tbsp chopped chives, 1/4 cup chopped fresh dill, 1/2 tsp garlic powder, 1/4 tsp onion powder and salt and pepper to taste. Mix well and adjust to your taste. Grate your cheese and dice your pickles.
Assemble your pizza. To your dough, spread on about half of the ranch. Top with sliced pickles and your cheese. Brush crust with a bit of oil and bake for 10-15 until cheese is golden brown.
Finish. Once pizza is cooked, top with fresh dill and crushed chips. Use remaining dill ranch for dipping.
