sticky hoisin lettuce wraps with spicy yogurt drizzle

2 lbs chicken breast or thigh

1/3 cup plain skyr
Pantry
2 tbsp olive oil
1/3 cup hoisin
1/3 cup soy sauce
1 tbsp honey
2 tbsp sriracha
1/3 cup kewpie mayo
Peanuts for garnish
Produce
1 head butter lettuce
1 carrot
2 bell peppers
1 tbsp ginger
3 cloves garlic
1 lime
Green onion and cilantro for garnish
pre-recipe prep
Dice your chicken into small 1/2 inch pieces and set aside.
Thinly slice carrots and peppers.
Wash and dry your lettuce.
Prep your garnishes - dice your green onions and chop your peanuts.
Make your sauces. Sticky hoisin sauce - in a small bowl, combine 1/3 cup hoisin, 1/3 cup soy sauce, 1 tbsp honey, 1 tbsp ginger, 3 cloves garlic and 1 tbsp water. Mix well and set aside.
Spicy yogurt drizzle - in a separate bowl, mix 2 tbsp sriracha, 1/3 cup kewpie mayo, 1/3 cup plain skyr, juice of 1/2 lime and a pinch of salt. Set aside.
Cook your filling. To a large pan, add 2 tbsp olive oil and heat over medium. Add diced chicken with a pinch of salt and cook half way through. Add sticky hoisin sauce and cook until thickened to a sticky caramel consistency and chicken is cooked through. If you use a non stick pan, you may need to add a splash of cornstarch slurry (1 tsp cornstarch and water mixed) to thicken the sauce.
Add your sliced peppers and carrots and cook for 1 more minute. Remove from heat and serve.
Serve. Serve family style, with lettuce on a platter, your garnishes in small bowls, the yogurt sauce on the side, and the filling in a large bowl with tongs.
