TOTAL TIME: 20 minutes to prep, 1 hour to rest
SERVES: 6-8
Milk & Dairy
1 1/2 cup whipping cream
1 1/2 cup whole milk
Pantry
1 tbsp sugar
3 bags of earl grey tea
1 pack of lady fingers
1/4 cup confectioner's sugar
1 1/2 tbsp vanilla
1 pack vanilla pudding mix
1 can sweetened condensed milk
Produce
1 pint strawberries
1 lemon - juice and zest
Make your tea. Add 3 tea bags to 1 cup boiling water. Set aside.
Make pudding. In a medium bowl, whisk together 1 pack vanilla pudding mix, 1 can sweetened condensed milk, 1 1/2 cups whole milk. Place in fridge for at least 5 minutes.
Make fruit layer. In a small bowl, add sliced strawberries (leave about 4 - 5 aside for the top layer) juice and zest of 1 lemon, and 1 tbsp sugar. Mix and set aside.
Make whipped cream. To a large bowl, add 1 1/2 cups whipping cream, 1/4 cup confectioners sugar, 1 1/2 tbsp vanilla. Mix with hand mixer for about 3 minutes until you see peaks form on their own (you can whisk by hand but this will take longer, so be ready to work).
Assemble. In a dish of your choosing (glass is best but use what your heart desires) start layering your ingredients. Depending on your dish size you may do 1 - 3 layers of each portion so layer it up accordingly (a rectangular pyrex will yield 1-2 thin layers of each, where a circular pie plate will be 2-3 layers of each).
One at a time, quickly dip lady fingers in your tea and place in your dish. Layer with your pudding, whipping cream, then strawberries. Repeat until you've used all your ingredients up. Top with last bit of whipped cream and remaining sliced strawberries.
Chill for at least 1 hour.
