herby noodle salad with poached chicken and crispy shallots
why it's perfect: a salad with noodles, is a salad I’ll eat every day. Maximum crunch and flavor, satisfying, yet kinda healthy? Yes please.
lazy girl hack: use rotisserie chicken to make this in 20. And do yourself a favor and make a double batch cause you’re gonna wanna eat it all week.
why it's perfect: love a dish that can be a summer breakfast, lunch, or dinner. Zucchini and swiss chard are the base, but you can toss in any of your farmer’s market veg.
lazy girl hack: everything cooks in one skillet. Looks fancy, tastes great, minimal actual work required.
why it's perfect: onion soup mix is the secret to these juicy flavor PACKED turkey burgers. No more dry, sad patties.
lazy girl hack: the soup mix does all the seasoning work for you. Throw on the bbq instead of the skillet for extra summer vibes. No one will know it’s turkey.
simple kale salad with hot honey halloumi
why it's perfect: crispy sesame breadcrumbs, seared halloumi in hot honey, and loads of pecorino. It’s a healthy-ish summer salad that actually keeps you full.
lazy girl hack: prep your kale right when you get home so you can throw this together in minutes all week long.
balsamic chicken with marinated tomatoes and bocconcini
why it's perfect: caprese meets chicken in the best possible way. A hot/cold combo is one of my faves in the summer: tangy balsamic chicken topped with cold marinated tomatoes and cheese.
lazy girl hack: make the marinated tomatoes in the morning, they get better as they sit. And prep extra cause this is great cold all week long.
why it's perfect: sun-dried tomatoes and roasted red peppers do all the flavor work here for this tangy summer pasta. And the asparagus cooks right in the pasta water= one less pot to wash.
lazy girl hack: make extra red pesto for the week to jazz up your eggs, sandwiches, or literally anything.
