this week’s lazy list: my favorite pickle-based recipes
Look, I realize that dedicating an entire newsletter to pickles might seem a little unhinged. But here's what I've learned: pickles make everything better. They're sitting right there in your fridge doing absolutely nothing, and meanwhile you're stressing about how to make dinner taste good. Just add pickles! Problem solved. 🤝
So today I'm giving you six recipes from the archives that prove pickles belong in way more places than just your burger. These aren't complicated; they're designed for those nights when you want dinner to feel special but don't have the energy for anything fancy. Think of this as your permission slip to make dinner interesting again without actually making it harder.






fried chicken tacos with pickle de gallo
why it's perfect: make this when regular tacos feel boring and you need something that makes you feel like a kitchen genius. The pickle brine does all the heavy lifting for flavor, and pickle de gallo is basically the best condiment that nobody's heard of yet.
lazy girl hack: use frozen chicken fingers and Grillo’s pickle de gallo and I won’t tell ANYONE.
why it's perfect: it's basically a deli pasta salad but way better because you control the pickle-to-pasta ratio. And there's no sad, mushy vegetables hiding in there.
lazy girl hack: this is the kind of thing you can throw together when you have zero energy but still want to feel like you cooked. Plus it gets better sitting in the fridge, so it's actually doing you a favor by waiting around.
why it's perfect: because sometimes you need dinner to feel like happy hour. Tangy pickles cut through all that melted cheese perfectly. Plus, I had so much fun making this with Steph the Sommelier I couldn’t not include this in the round up.
lazy girl hack: 4 (main) ingredients and cooks in 5 minutes… can’t get an easier lazy girl pickle dinner if you tried.
cornflake crunch chicken sandwich with pickly aioli
why it's perfect: the cornflakes give you that satisfying crunch without having to actually fry anything (way easier). And the pickle aioli makes even grocery store rotisserie chicken taste fancy.
lazy girl hack: make a big batch of that pickle aioli. I put it on everything… sandwiches, roasted vegetables, sometimes just eat it with chips.
why it's perfect: 3 of my favorite things, pickles, pizza and cheese!
lazy girl hack: grab store-bought dough and call it a day. The pickles are the star here, everything else is just backup.
why it's perfect: I think this is the perfect lunch or quick dinner. It’s high in protein, has a great crunch, and the splash of pickle brine is the perfect tangy flavor.
lazy girl hack: it’s great for meal prep (you can easily double or triple the recipe and eat it all week) but it’s also versatile. Eat with chips one day, put it in a pita the next. So many options!

pickle t-shirt: you guys love this on my Instagram and honestly, same. It's ridiculously soft and makes me smile every time I wear it.
pickle juice ice cubes: hear me out… freeze pickle brine in ice cube trays and add them to bloody marys, dirty martinis, or even just sparkling water for an instant flavor kick. It’s SO GOOD and the best hack.
pickle flip jar: I’ve seen this everywhere and figured some of you might find it handy… the lazy girl solve for taking pickles to work without having to dig your hand in the jar! It flips to drain the juice, so your hands stay clean, and now the juice is ready a pickle juice shot.
