1lb ground turkey

200 g mozzarella
3 tbsp butter - room temp

4 sesame seed burger buns
1/3 cup panko
3/4 tsp ground fennel seed
1/2 tsp smoked paprika
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp red pepper flakes
1 tsp salt
1 cup jarred marinara sauce
5 tbsp olive oil

2 cloves minced garlic
1/4 cup minced white onion
1 tub arugula
1 lemon
1 fennel bulb
Make your burger patties. To a large bowl, add 1/3 cup panko, 1/3 cup grated parmesan, 3/4 tsp ground fennel seed, 1/2 tsp smoked paprika, 1/2 tsp dried basil, 1/2 tsp dried oregano, 1/2 tsp red pepper flakes, 1 tsp salt, 1/4 cup minced white onion, 1 egg and mix well. Add in ground turkey and mix lightly with hand until just incorporated. Divide into 4 patties and place into fridge for a few minutes.
Prep your salad. To a large bowl, add 1 tub arugula, 1/3 cup parm, a pinch of salt, juice of 1 lemon, 1 thinly sliced fennel bulb, and a good glug of olive oil (about 3 tbsp). Mix well and set aside.
Cook your patties. Set your oven to broil and prepare a large baking sheet with parchment paper. To a large pan, heat 2 tbsp olive oil over medium heat. Cook burger patties until golden brown on each side and cooked through (about 3-4 minutes per side). Remove from pan and place onto baking sheet. Top each patty with 1/4 cup marinara sauce, and 1/4 of your cheese.
Add your buns to the baking sheet, buttering the insides, and placing butter side up.
Broil for 5 or so minutes until cheese is melted and buns are toasted - keeping a very close eye so they don't burn - you may need to remove buns early.
Assemble. Place patties on your toasted buns and top with a good handful of your salad on each burger. Serve remaining salad on the side.
