Prep your ingredients. Dice watermelon and feta into same size cubes (about 1 cm square cubes). Refrigerate watermelon for a few minutes before assembling, as it firms it up and makes it easy to pierce.
Assemble bites. Assemble bites with a piece of watermelon, feta, mint leaf, watermelon and skewer it with a toothpick. Place on plate and refrigerate until serving.
Finish and plate. When you are ready to serve, drizzle with balsamic glaze and finish with chopped pistachios and flaky salt.
