This looks amazing - planning on making for Thanksgiving! Do you think it would be okay to make the carmelized onions and cheese sauce in advance, then cook pasta and bake day of?

Yay! Can 100% make the onions in advance. I am not 100% sure on the cheese sauce though. I’d say if anything grate the cheese in advance, but make the cheese sauce fresh. I’m just worried it will separate or take on a weird consistency. The sauce is pretty quick to make. And definitely don’t make the noodles in advance.
