Hi! I’m back from my mini vacay and slowly getting back into the routine. I’ll share more photos and updates from my time on the sunshine coast in this weekend’s dinner, sorted!
In the meantime, here’s a round up of the easiest, tastiest apps to bring to your next long weekend party!! Because showing up empty-handed makes you that friend. But spending your entire Saturday prepping some Pinterest-perfect charcuterie situation? Not our vibe. These are easy to make, delicious, and wow-worthy. You know the drill.






why it's perfect: the perfect summer bite, and the easiest way to impress your friends with an appetizer while doing the least
lazy girl hack: so easy to prep in advance, and these are actually better if they’re straight from the fridge, so just finish with a little drizzle right before serving.
why it's perfect: I freaking love a bloody mary but for some reason it feels illegal to drink it unless you’re A. at a pool or B. hungover on a sunday. Enter this ceviche will I will gladly eat any time or day. It’s like an elevated shrimp cocktail and who doesn’t love a good ol’ shrimp ring!?
lazy girl hack: use pre-cooked shrimp to speed things up, and you’ll probably want to make yourself a double batch for dinner for the week
why it's perfect: all the crispy, creamy goodness of restaurant rangoons with sweet summer corn in 20 minutes. I promise you’ll get asked for this recipe.
lazy girl hack: prep these ahead of time and freeze or refrigerate until ready to cook. Just spray with oil and cook until golden and gooey.
why it's perfect: it really doesn’t get easier than this, but people go nuts. Chips - good. Chips with cheese - gooooooood. Chips with cheese and meat - I’ll eat the whole plate.

lazy girl hack: whip your cheese ahead of time, use your favorite pre-made crostinis, and use whatever fruit and nut combo you have on hand
chocolate peanut butter ice cream bars
why it's perfect: they’re giving fudgsicle dipped in chocolate vibes… highly addictive and highly impressive. AND they’re made with skyr so you can proudly tell your protein obsessed friends these are kinda sorta healthy-ish (heavy emphasis on the kinda).

other long weekend essentials
I’ve done the browsing for you! one less task to check off
Yeti cooler: I love my Yeti so much. Yes, it’s pricey, but I use it so much every summer. Quality > quantity. It’s perfect for hauling snacks to the beach or to your next potluck, or just keeping keeping drinks cold when you’re hanging on your patio and don’t feel like running back inside.
acrylic patio cups: I love to bring a cute glass to any outdoor hang, it just makes things feel a bit more.. adult. Looks fancy, stacks easy, and can toss them into my go bag without breaking them.
sunscreen: stay safe out there!!! UV damage is no joke. I love the spray version - ultimate lazy girl. Just spray and go. And the scent on this is just the best.
cute beach towel: a cute towel in my beach bag makes sitting on the grass a bit more bearable and a bit more chic (clearly I’m not an outdoor girl). And this one is nice and lightweight.
Weber mini grill: make everyone else at the beach extremely jealous by grilling up some fresh dogs mid afternoon. I used to have this one (with a stand) and loved it, it was great for my small patio, and the perfect size to haul along to the beach.
cheeseburger chips: and if you’re feeling really lazy and wanting that BBQ flavor but can't be bothered to actually BBQ 😉 I can confirm these are delish.

You made those crostinis with whipped ricotta last June for me and you converted me to whipped ricotta. I think I'll try these again in a couple of weeks when we're having the nurses over for a BBQ.
